Los Mochis Launches TENrei: The Art Of Tuna Ceremony
Los Mochis London City, the much-loved restaurant where Tokyo meets Tulum, is excited to announce the launch of TENrei: The Art of Tuna Ceremony. Launching to the public on Tuesday 12th November, this immersive celebration of Japanese cuisine will take place every second and fourth Tuesday of the month, offering guests a front-row seat to witness the artistry of traditional tuna preparation alongside an exclusive menu, with a focus on sustainable sourcing.
The name TENrei originates from the Japanese meanings of ‘ceremony’ and ‘ritual,’ with TEN symbolising the 10-course menu. This unique experience begins at 6pm, where diners will witness a live presentation of the Bluefin tuna breakdown – a demonstration of the intricate art behind preparing this premium fish. Under the guidance of Executive Head Chef Leonard Tanyag, guests are invited to capture the moment and engage with the chefs as they reveal the techniques behind their craft.
At the heart of TENrei is a whole Bluefin tuna, responsibly and sustainably sourced from Balfegó, a pioneering, family-run company in Spain dedicated to the sustainable fishing, study, and distribution of Bluefin tuna. Balfegó is the first Spanish fishing company to be B Corp certified, demonstrating its deep commitment to sustainability, social responsibility, and environmental impact. The company uses selective seine techniques that target only adult Bluefin tuna, ensuring that smaller, juvenile fish are released back into the ocean, helping to promote population growth and maintain healthy ecosystems. Balfegó collaborates closely with international organisations such as ICCAT, and Spanish research institutions to enhance sustainability efforts, strictly adhering to monitoring systems, fishing quotas, and traceability protocols that ensure the highest standards of environmental responsibility.
Following the live tuna preparation, diners will enjoy a curated 10-course menu that showcases the rich and distinct flavours of Bluefin tuna, from the lean Akami to the luxurious Otoro. As always, the team at Los Mochis has crafted a technically brilliant menu that is entirely nut and gluten-free. The menu consists of:

To elevate the experience (priced at £195 for the meal), guests can opt for a Sake or Wine Pairing, for £110 per person, expertly paired to enhance the flavours of the tuna dishes. The sake selection features premium offerings like Masumi “Origarami” Sparkling and Shirakabegura Junmai Daiginjō, while wine pairings include exceptional labels such as Château Mercian ‘Fuekuki’ Koshu Gris de Gris Japan 2021 and William Fevre Grand Cru ‘Bougros’ Chablis 2019.
