This November, chef-patron Peter Joseph from Kahani in Chelsea will host an immersive 19-day culinary journey through India. This will be a rare opportunity to travel alongside a leading London chef as he returns to the regions, kitchens and traditions that have shaped his cooking. The tour has been created in partnership with Bestway Tours & Safaris, combining Joseph’s personal insight with a carefully curated, fully hosted itinerary.

Departing 19 November 2026, The Culinary & Cultural Soul of India will be personally hosted by Joseph throughout. Born in Chennai, he brings a deeply personal perspective to the experience, guiding guests through India’s diverse culinary landscape with the same storytelling-led approach that defines Kahani (meaning story in Hindi).

Joseph opened Kahani following his tenure as Head Chef at Tamarind in Mayfair – one of the first Indian restaurants in the world to receive a Michelin star – where he played a key role in shaping modern Indian fine dining in the capital.

Spanning north to south, the itinerary moves from the spice-laden streets of Old Delhi and the refined Nawabi cuisine of Lucknow, through the Mughal grandeur of Agra and Jaipur, before heading south to Kerala’s coastal kitchens and backwaters, and on to the temple cities and bold flavours of Tamil Nadu.

This one-of-a-kind experience offers privileged access to India’s culinary landscape. Guests will step inside private homes for traditional cooking sessions, explore Asia’s largest spice market in Old Delhi, and dine in historic residences shaped by royal and regional traditions, all planned and hosted for them.

Highlights include a rickshaw-led street food exploration through Chandni Chowk, a rare full moon visit to the Taj Mahal, and an overnight stay on a traditional houseboat in Kerala’s backwaters, where meals are prepared onboard using local ingredients and time-honoured techniques.

Throughout the journey, cooking experiences form the backbone of the itinerary, from Mughlai dishes in Agra to coconut-rich coastal curries in Cochin and spice-led cuisine in the Western Ghats, offering guests a hands-on understanding of India’s regional diversity.

Peter Joseph says “This is about going beyond what you see on the plate. I can’t wait to share the people, places and traditions that have shaped how I cook, and experiencing India in a way that feels personal, immersive and real.”

With limited places available, the tour is designed for travellers and foodies seeking a more meaningful, experience-led way to explore India, all organised for them. It is available to book now: https://www.kahanilondon.com/culinary-cultural-soul-of-india/.
