Head Chef Alessandro Verros brings a wealth of experience and expertise to the kitchen. Trained by renowned chefs from Nobu and Roka, he has a unique skill set that blends traditional techniques with innovative culinary practices. The menu showcases a variety of mouth-watering sharing plates, with highlights including; Crispy Rice and Salmon Tartare served with a citrus sauce; Lobster Tempura served with yuzu mayo and the Sea Bass & Tuna Ceviche, served with a reinvented Peruvian recipe with spicy sauce and prawn crackers. Sushi enthusiasts will appreciate the extensive selection of fresh sashimi, nigiri, and rolls, featuring indulgent dishes such as the Seabass & Truffle Roll, Black Cod Maki, Green Californian Maki with Wasabi Tonoli and the Hamachi & Jalapeño Roll, which combines yellowtail with cucumber and a subtle heat.
Mains from the Robata grill offer a deeper dive into Ukai’s culinary sophistication.
