This year, Nicolas Rouzaud, the celebrated French chef and visionary, renowned for redefining the art of patisserie, presents a stunning Galette des Rois, a timeless French pastry reimagined with a fresh, symbolic design. The galette features a delicate pattern inspired by seasonal wildflowers, celebrating new life and renewal, perfectly encapsulating the spirit of Epiphany and the start of a new year.

Inside the buttery, flaky layers of puff pastry lies a luxurious almond frangipane filling crafted from premium Marcona almonds, sourced from Spain, known for their sweet and delicate flavour. Hidden within is the traditional fève – a cherished Connaughty Hound token symbolising fortune and tradition. As is customary, the lucky guest who finds the fève is crowned king or queen for the day, adding an element of surprise and joy to this celebratory treat.

Beautifully crafted and steeped in tradition, Nicolas Rouzaud’s Galette des Rois is more than a dessert – it’s an edible masterpiece that honours both heritage and the beauty of nature. Perfect for sharing with loved ones, this exquisite pastry makes a regal centrepiece for your festive table.

Priced at £50, Nicolas Rouzaud’s Galette des Rois will be available from January 1 to January 31, 2025, at The Connaught Patisserie, by Nicolas Rouzaud. During this period, individual slices will also be offered, priced at £7.50 for takeaway or £9 for dining in.
