This summer, Urban Greens elevates its Guest Chef Series with the Paradise Salad — a vibrant, transportive collaboration between Dom Fernando, founder of Soho’s Paradise, celebrated for bringing a fresh energy to Sri Lankan flavours, and Finn Tonry, MOB Chef and Head of Food at Urban Greens.

Available from 16th June for just four weeks, the new salad is a big flavour-driven nod to the tropics — blending Paradise’s Sri Lankan roots with Urban Greens’ innovative spirit and carefully sourced ingredients.

At its centre: a sticky, tangy tamarind and jaggery-glazed chicken, laid over Camargue red rice and layered with broccoli, pickled red cabbage, toasted cashews, fresh coriander, and a cherry tomato & coconut pol sambol — a fiery yet sharp Sri Lankan classic made with coconut, chilli, and lime. It’s all tied together with a curry leaf dressing, made with kithul syrup — a distinctive and deeply traditional Sri Lankan ingredient drawn from the sap of the fishtail palm.

“This one’s for the flavour-chasers,” says Finn Tonry. “Dom and I knew we wanted to create something that felt like a tropical escape — but done the Urban Greens way. Every layer has a role to play, whether it’s for heat, crunch, brightness or depth. It’s a salad that keeps surprising you.”

The Paradise Salad brings a fresh twist to the Urban Greens lineup — bold, dynamic, and packed with feel-good flavours that naturally fit the UG vibe, while introducing a flavour profile from a region of the world not yet explored on the menu.

“Urban Greens and Paradise share a philosophy,” says Dom Fernando. “We both care deeply about ingredients, about balance, and about crafting dishes that feel intentional but also full of joy. This collab brings together our worlds — it’s modern, seasonal, and has the soul of Sri Lanka running through it.”

The Paradise Salad will be available at all Urban Greens locations and online via delivery from 16th June — the freshest way to escape your lunch routine this summer.
