Seaforth, the signature restaurant within The Municipal Hotel & Spa Liverpool, has unveiled a new collection of Spring/Summer menus, each offering a distinct way to experience its refined, globally inspired British brasserie.
Inspired by Liverpool’s historic position as a gateway for global trade, Seaforth’s new menus bring together local provenance and international influence, reflecting the city’s rich cultural exchange and maritime legacy.
The à la carte menu: Seaforth’s signature experience
At the core of the restaurant is its à la carte menu, designed as the most comprehensive expression of Seaforth’s culinary identity.
Here, guests can explore a full range of dishes that combine British ingredients with global techniques – from pan-seared scallops and king prawn and ‘Red Rum’ cured Scottish salmon to mains such as loin of lamb with scouse croquette and miso glazed cod with Asian-inspired flavours .
A standout Josper grill section further elevates the offering, with premium, locally sourced cuts such as salt-aged beef fillet and bone-in sirloin, cooked over natural charcoal to enhance depth and smokiness .
Desserts provide a polished and indulgent finish, with highlights including rich chocolate delice with Morello cherry sorbet, salted caramel crème brûlée, and pineapple tarte tatin with coconut ice cream, alongside a trio of British artisan cheeses .
This menu is available for lunch and dinner daily, forming the cornerstone of Seaforth’s dining experience.
The Time to Dine menu: a flexible, daytime set menu
Running alongside the à la carte is Seaforth’s ‘Time to Dine’ menu, a midday set menu designed for more relaxed, daytime dining.
Available Monday to Saturday from 12pm to 6pm, the menu offers guests the choice of one, two or three courses, making it ideal for business lunches, pre-theatre dining or a more accessible introduction to Seaforth .
The menu features a curated selection of dishes drawn from the wider kitchen repertoire, including seasonal soups, burrata and ham hock pressing, alongside brunch-inspired classics such as eggs royale and smoked haddock, and lighter mains including sea bass and bucatini aglio e peperoncino .
Positioned as a more informal counterpart to the à la carte, Time to Dine delivers the same quality and flavour, in a format designed for flexibility and value.
The tasting menus: a curated, immersive experience
For a more elevated dining occasion, Seaforth offers tasting menus that guide guests through a multi-course culinary journey, designed to showcase the kitchen’s most refined dishes in sequence.
Available as both classic and vegetarian formats, the tasting menu presents a progression of signature plates, from ‘Red Rum’ cured Scottish salmon and ham hock pressing, through to Lake District duck, finishing with rich chocolate delice .
Enhancing the experience further, guests can opt for carefully curated wine pairings with each course, thoughtfully selected to complement and elevate the flavours of every dish. Pairings include wines such as Cinsault rosé, Riesling and Rioja Crianza, culminating in a Graham’s LBV Port served alongside dessert, creating a seamless and considered journey from start to finish .
A dedicated vegetarian tasting menu mirrors this experience, with dishes such as truffle honey burrata and sweet potato and spinach laksa, paired with wines including Pinot Noir, Pinot Grigio and Riesling, ensuring the same level of depth and balance across all dietary preferences .
A refined take on tradition: Sunday Lunch
Completing the offering is Seaforth’s Sunday Lunch menu, which reimagines British classics with a refined touch – from roast Cumbrian sirloin with Yorkshire pudding and beef jus to lighter alternatives including sea bass and gnocchi puttanesca.
A considered drinks programme to complement every experience
Complementing the food offering is an extensive drinks menu designed to mirror Seaforth’s global outlook and refined approach. Guests can explore a curated selection of classic and contemporary cocktails, from a perfectly balanced Mojito and Passionfruit Martini to more elevated signatures such as the Mistral, combining gin, Midori and sauvignon blanc .
The wine list spans key regions and styles, offering everything from crisp, food-friendly whites such as Marlborough Sauvignon Blanc and Chablis, to structured reds including Rioja Crianza and Barossa Shiraz, alongside a premium Champagne selection featuring houses such as Laurent-Perrier and Dom Pérignon . Sparkling and low-alcohol options, including English botanical blends, ensure a breadth of choice for every occasion.
Locally rooted touches run throughout the list, including The Municipal Pale Ale, brewed exclusively in Liverpool, while the inclusion of dessert wines, digestifs and a full coffee offering allows guests to extend the experience from aperitif through to after dinner .
A restaurant shaped by Liverpool’s story
Located within the historic Municipal building on Dale Street, Seaforth reflects a legacy of connection and exchange. Once designed to bring the city together, the building now enters a new chapter as a destination for dining, culture and experience.
Today, Seaforth continues that story – offering everything from relaxed daytime dining to immersive tasting experiences, all underpinned by a menu that celebrates Liverpool’s past while looking firmly to the future.
