Urban Greens introduces Goan Dream — a new guest-chef salad created in collaboration with cook, broadcaster, and author Crystelle Pereira, alongside Finn Tonry, Head of Food at Urban Greens. Inspired by Crystelle’s Goan heritage and brought to life through Urban Greens’ flavour-first approach, the salad is a joyful exploration of spice, texture, and balance.

Designed to be comforting yet fresh and punchy, Goan Dream layers aromatic Goan cafreal chicken over Camargue red rice, with a rich curried coconut slaw, cherry tomatoes, pickled onions, and fresh coriander. A crunchy Bombay mix topping and a sweet-sour tamarind and date chutney bring lift and contrast — delivering a depth, brightness, and warmth in every bite.

“I’ve been a fan of Urban Greens for a long time, so creating a bowl with them felt incredibly natural,” says Crystelle Pereira. “The Goan Dream salad is a celebration of flavour, heritage, and balance, inspired by my Goan roots and love of vibrant, nourishing food.
“Each element has been carefully crafted to complement the next, taking the palate on a journey through the bold, fragrant flavours of South India. As satisfying as it is delicious, the salad is naturally nutritious, offering a well-rounded balance of protein, fibre, and carbohydrates to keep you feeling energised and happily full.

“This is the kind of food I love to eat and love to cook — joyful, comforting, and meant to be savoured.”

Finn Tonry, Head of Food at Urban Greens, adds: “Working with Crystelle was about respecting the integrity of Goan flavours while translating them into something that feels unmistakably Urban Greens. The result is a salad that’s bold, balanced, and deeply satisfying — layered, aromatic, and full of character.”

The Goan Dream salad will be available at all Urban Greens locations for dine-in, takeaway, and delivery, from 20th January for one month only.
