Marking The Cinnamon Collection’s 25th anniversary celebrations, acclaimed chef and restaurateur Vivek Singh is releasing Spirit & Spice (£50), his seventh book and most personal to date.

Part cookbook, part memoir, Spirit & Spice offers an intimate look at the food, people, places and philosophy that have shaped the groundbreaking restaurants that helped redefine modern Indian dining in Britain, as well as Vivek’s pioneering career.

Published to coincide with this landmark milestone, the book weaves together behind-the-scenes stories from the kitchen and reflections on 25 years in an ever-changing restaurant landscape. Over 69 full-page signature recipes from the restaurants’ most popular dishes, many appearing in print for the very first time, are accompanied by photography from Jean Cazals.

Spirit & Spice captures the creativity, craftsmanship and curiosity that have become synonymous with The Cinnamon Collection, tracing the journey from the opening of The Cinnamon Club in the historic Old Westminster Library in 2001 to the strong restaurant group it has become today.

Vivek Singh says: “When we opened The Cinnamon Club in 2001, we wanted to challenge expectations of what Indian food in Britain could be. Twenty-five years later, that sense of curiosity and challenge is still what drives us.
